Our ingredients are chosen with care, sourced from trusted local producers within a 30-mile radius. These partners share our commitment to quality and sustainability:

• Black & white pudding by Gracehill Foods, Ballymena
• Mushrooms grown in Armagh
• Handmade sausages from Lisdergan Meats, Omagh
• Sustainable smoked salmon from Glenarm, Co. Antrim
• Porridge oats milled in Armagh
• Ham by Givan's of Antrim
• Yoghurts from Clandeboye Estate, Co. Down
Our tea is proudly brewed using Thompsons of Belfast blends and our Java Republic coffee is Fairtrade certified, roasted right here in Ireland.
A Greener Table
Sustainability is at the heart of everything we do. Our practices help protect the environment and encourage biodiversity:
• We recycle all cooking oil via Frylite, turning it into biodiesel.
• Our chefs grow fresh herbs and edible flowers (such as pansies, violas, parsley, thyme, coriander, mint, and rosemary) onsite for use in cocktails and desserts.
• At breakfast, you’ll find local honeycomb on display, with information on how bees play a vital role in sustaining the ecosystem and supporting biodiversity.

• A dedicated healthy choices section on the breakfast menu
• Gluten-free items served on a separate station at the breakfast buffet
• A lighter bites selection on our bar menu

We focus on local suppliers wherever possible, aiming for 80% local food sourcing, and we assess our key suppliers for human rights, environmental standards, and certifications like Fairtrade, Rainforest Alliance, and ISO 14001. We actively reduce waste and single-use plastics, track our progress each year, and work with suppliers who share our values , from fair labour to low-carbon operations. Every purchase helps us make a positive impact on people and the planet.

Private dining is available for groups of up to 30 guests. Or you can reserve your own section of The Restaurant for up to 45 guests.
